On Lafayette Street in New York’s Soho, Austrian baker Martin Auer debuted his Rye bakery, pricing a 1.5-kilogram rye sourdough loaf at $60. He attributes the cost to the premium location, rent that far exceeds Austrian rates, and the use of wholly imported Austrian rye flour and other bio ingredients. The loaf, made with a starter-only fermentation, contains only a quarter of the gluten found in typical wheat bread and is marketed as “kosher-friendly.”
Customers can watch every step of production, from dough mixing to oven baking, and the bread is sold only after an eight-hour rise. Auer compares the price gap to the disparity between designer and fast-fashion items in the city. He also offers Austrian-style spreads such as Liptauer and apricot jam alongside the bread.
