Biotech firms aim to engineer foods that won’t trigger allergic reactions

Researchers are using gene editing and AI to redesign allergenic proteins, seeking safer foods and new tolerance therapies.

More than 22 million Americans suffer from food allergies, a condition that drives a $370.8 billion annual economic burden and forces many into strict avoidance. New research shows that tolerance depends on recognizing certain protein fragments, suggesting a vaccine-like approach could re-educate the immune system. At Stanford, Beth Sattely is decoding these plant-derived signals to understand how tolerance develops.

Parallel efforts include IngateyGen’s CRISPR removal of peanut allergen genes and Kansas State’s gene-edited wheat with reduced gluten immunogenicity. Ukko combines AI-guided protein redesign with gene editing to blur allergenic epitopes while preserving function, and its peanut candidate UKK-0018 has begun safety trials, with early data due in 2027. The advances hint at a future where crops are bred to be inherently non-allergenic, though financial and market hurdles remain.
