Prince Street Pizza expands nationwide using engineered New York water system

Prince Street Pizza is growing to about 20 sites across the U.S. and Canada, using a water-filtration technology that mimics New York City water to keep its signature taste.

Prince Street Pizza, famed for its square Sicilian slices, has expanded from its original SoHo shop to roughly 20 restaurants throughout the United States and Canada. Lawrence Longo, chief executive of parent company Best Buddy Hospitality, attributes the rollout to strong demand and a strict focus on product consistency. To replicate the distinctive flavor of the original pies, the chain installs a New York WaterMaker system that converts local water into a profile matching New York City’s supply.

The brand’s celebrity following, including Adam Sandler, does not affect service standards, as all patrons are treated alike. Beyond dining, Prince Street is producing a video series called "Delivering Happiness" with actor Nick Turturro, featuring guests like Dana White and Ice-T, and has extended the content to TikTok Radio and iHeartMedia. A recent collaboration with Disney recreated the Little Nero’s pizza from "Home Alone," winning a Clio Award. Longo emphasizes that scaling the cult brand requires staying true to the qualities that made the original SoHo location successful.
